The Mighty Bowl, Vancouver’s first food truck, now has three food trucks, and is working on a brick-and-mortar kitchen. Owner Steve Valenta said he hopes to have the kitchen operational by the end of the year.
“I’m investing everything in Vancouver, and putting my money where my mouth is,” he said.
Located at 108 W 8th St., the kitchen will allow Mighty Bowl to take food trucks to other parts of the county – areas Valenta termed “food deserts.” He added that several large organizations have asked the business to come and serve their people once a week.
“Up to now we’ve had to turn them down,” Valenta said. “Now we’ll be able to take advantage of this opportunity.”
